Grapes are from Muscat dAlsace vines planted 40 years ago in limestone soils. All grapes are harvested by hand. The hand picked grapes are pressed, and the juice undergoes a cold settling process to remove impurities before fermentation begins. Fermentation is entirely spontaneous, utilizing only naturally occurring native yeasts without added commercial cultures.
