He has been making wine for nearly 20 years for the family property and has now set up on his own. In just a few years he has made the Billaud Simon estate a flagship of the Chablis wine region. Lively citrus notes on the nose, soft white peach and a touch of green apple, well balanced with an elegant mineral finish.
