GRAY MONK MERLOT VGrapes from the southern Okanagan Valley were used for the Merlot. The juice underwent malolactic fermentation for 2 3 weeks and was then aged in oak barrels for 8 months. Before bottling the wine went through fining and minimal filtration to enhance varietal characteristics.
